Homemade Fish Fingers
This is my recipe from the Fish is the Dish Family cook book. I love going to their website for recipe inspiration. Ever since I went to the Cookery class they hosted here in the Belfast Cookery School, fish has definitely been on the menu a lot more. Sophie nows eats and loves mussels all because of these wonderful people, I would have never have thought to give her mussels and now its a firm favourite, she would eat them all the time if I let her. Its the easiest and quickest thing to make it takes around 3 to 4 minutes in all. These fish fingers take around 7 minutes and Sophie loves them its also a recipe that she can help with even if it does get a little messy. Ingredients
2 fillets of white fish
250g Breadcrumbs
50g finely grated Parmesan Cheese
300g Fresh Parsley
1 tsp Paprika
2 Pinches of salt
2 Pinches of Pepper
200g Plain Flour
2 Eggs
Method
Chop Parsley and put it in a bowl with breadcrumbs, parmesan and paprika.
Season and mix thoroughly.
Whisk the egg in another bowl.
Sieve the flour into a third bowl
Cut the Fish into finger sized chunks
Coat each finger in the flour and dip in the egg before coating in the breadcrumbs.
Oven bake at 200 for 7 to 10 minutes until golden brown
